Ingredients

    1 Lb Great Northern or Yellow Eyed Beans
    1 large onion quartered
    1/2 cup maple syrup
    1/2 cup molasses
    2 Tbl catsup
    2 Tbl spicy brown mustard
    1 Tbl dry mustard
    Salt & pepper to taste

Directions

Soak beans overnight in plenty of cold water. Drain soaking water & discard. Cover beans with cold water and cook until near tender about 1 1/2 hours over low heat. Drain beans reserving 1/2 cup of water.
Put beans and reserved water in crock pot. Add molasses, maple syrup, ketchup and both types of mustard. Add 1 Tbl. salt and stir well.
Top with quartered onion.
Cook on low heat (200 degrees) in crock pot for 6 hours or until soft.
You can put beans in a 350 degree oven to brown for 30 minutes if desired. Use a casserole dish. Do not put your crock pot in the oven.
Add salt and pepper to taste.

    Incredible!
    These are wonderful. They are sweey without tasting too candied and low acid, as well. Added salt is not needed. I use them as a filling main dish for myself and like to have single portions in the freezer, ready to eat. - 6/14/16
