Ingredients



    Ground beef, lean, 16 oz
    1 Large Yellow Bell Pepper (cut into pieces)
    1 Large Red Bell Pepper (cut into pieces)
    Garlic, 1 clove (minced)
    *Extra Virgin Olive Oil, 2 tbsp
    1 Shallot (minced)
    1/3 cup Ketchup
    1 Cup Hunt's (Canned) Diced Tomato (drained)
    2 tsp Oregano (to taste)
    1 tsp Smoked Paprika (to taste)
    1/4 tsp. Kosher Salt

Tips

The smoked paprika and the oregano are what give it that "meatloaf" taste for me. You could easily vary the spices without changing the calories. I serve this over brown rice.


Directions

Sautee garlic, peppers, and shallot in olive oil until slightly soft.
Add in ground beef and cook until brown.
Drain fat from beef/sautee mixture.
Add in tomatoes, spices, and ketchup.
Simmer on medium-low heat stirring occasionally for 20 minutes.
