Ingredients

    Kale - 1 bunch, chopped
    Quinoa - 1 cup cooked
    Dried Cranberries - 1/3-1/2 cup
    Toasted Almonds - 1/2 cup
    Lemon - 1 whole
    Olive Oil - 1 tablespoon

Tips

Add additional fresh lemon before serving.


Directions

Cook quinoa according to directions and pour over the chopped kale to wilt it. Add the rest of the ingredients, including the olive oil and lemon. Toss gently.
