Ingredients

    2 tbsp extra light olive oil
    2 lbs boneless, skinless chicken breast, cut into 1/2 inch cubes
    2 15.5 oz cans white beans, rinsed
    3 large poblano chilis, seeded & chopped
    1 lg white onion, finely chopped
    1 tbsp chopped garlic
    6 cups chicken broth
    1/2 tbsp ground cumin
    1/2 tbsp dried oregano
    1 tsp dried chipotle chili powder (optional)
    4 oz pepper jack cheese (optional)
    1/2 cup light sour cream
    chopped cilantro for garnish

Directions

1. In medium saucepan, heat the oil over medium heat. Add the chicken & stir frequently until cooked through about 15 mins.
2. Add 2 cups white beans, poblanos, onion & garlic. Cook, stirring frequently, until beans break apart, about 15mins.
3. Stir in chicken broth, cumin, oregano & chipotle powder. Reduce to low heat. Add remaining beans & heat through.
4. Top portions of the chili with cheese, 1tbsp sour cream & cilantro.

Serving Size: 1 cup - makes about 6 servings
