Ingredients



    *Dijon mustard, 1 tsp
    *(C) Garlic, minced, .25 tsp
    *Dried Oregano, .25 tsp
    *Balsamic Vinegar, Kirkland, .25 teaspoon
    *Bird's Eye Broccoli Florets, 2 cup
    *Pinch of Salt= 1/16 Tsp., 1 serving
    *Black Pepper - 1 Pinch, 1 serving
    Nature’s Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked, 0.25 cup
    Olive Oil, 2 1tsp
    *Trader Joe's Wild Sockeye Salmon Filet, 3 oz

Directions

Combine 1 teaspoon Dijon with garlic, oregano and vinegar. Spread onto the salmon filet. Toss 2 cups broccoli florets with two teaspoons olive oil and a pinch each of salt and pepper. Spread broccoli on baking sheet and bake at 375 for twenty minutes. Turn oven to broil and place salmon filet on broccoli and broil stirring broccoli so that it doesn't burn. Cooking until salmon is cooked (7-8 minutes). Serve salmon of cooked quinoa and next to the vegetables.
