Introduction

Put pot of water on to boil.
In separate heavy pan, put 1 Tbs olive oil in with 1/4 cup chopped onion on medium heat. Sauté onions. Peel & crush 3 large cloves garlic. Add to onions. Add 1 1/2 cup sliced mushrooms.
Add angel hair pasta (2 oz per person) to boiling pot. I cook the shrimp in the same water, but you can precook the shrimp, shell them ahead of time, & add the cooked shrimp into the pot to reheat them just before the pasta finishes cooking.
When the pasta is al dente, drain it & the shrimp. Add 16 oz fresh spinach leaves to the heavy pan along with the 2 Tbs half & half. Toss veggies together.
Serve pasta on plate. Put 1/4 of pan's contents onto pasta, & add 4 oz shrimp across top of this presentation. Serve with 25g (1/4 cup) Parmesan cheese per serving.
Add pepper or salt to taste. (This has 773 mg salt in the recipe: it is a splurge recipe for some of us!)
Tips
Precooked shrimp, while more costly, does save prep time.
Directions
Cook angel hair spaghetti al dente, drain, & set aside.
Cook shrimp & peel if necessary. Add to spaghetti.
Keep warm.
