Ingredients

    6 corn tortillas
    1 can of black beans
    half of a green, yellow, red or orange pepper
    0.5 cup of corn
    4 tablespoons of cilantro
    1 bag of mexican shredded cheese
    salt and pepper to taste

    Drain beans in a strainer. Cut pepper into small pieces. Mix pepper, beans, corn, cilantro, salt and pepper in a bowl. Place tortilla in a hot pan, put bean mixture on the tortilla, add about 1/4 cup of cheese on top, the place another tortilla on top. Cook for 2 minutes, then flip over. Cook for another 2 minutes, enjoy!
