Ingredients
Mashed Potatoes, 1500 grams
Flour, whole grain, 500 grams
Egg, fresh, whole, raw, 2 large
Apples, fresh with skin, 1 large (3-1/4" dia)
Directions
Cook the potatoes and mash them. Once they are cold add two eggs and the flour and make dough. If needed, add some more flour. The dough should be easy to form and not very sticky (a bit is OK).
Cut the apple into small pieces and season with cinnamon.
Form 30 small balls out of the dough and place a piece of apple in each one. Make sure the apple is inside and cannot fall out.
Boil 3 liter water and place the balls into it. Once they start swimming on the surface, wait 3 minutes and take them out.
Please note you can boil about 5 at a time (depending on the size), otherwise they will stick together.
Once all are cooked you can spray them with the non-stick.
The balls can be eaten either freshly cooked or you can cook them first and them fry them (without fat). Season with cinnamon.
