Ingredients

    1 lbs. cubed lamb
    4 large carrots, chopped
    2 stalks celery, chopped
    1 medium onion, finely chopped
    1 cup fresh mushrooms, pieces or chopped
    5 medium potatoes, cubed
    2 garlic cloves, finely chopped
    1/2 cup flour
    12 oz red wine
    water to cover
    vegetable oil
    salt
    pepper
    1 bouquet garni
    2 bay leaves
    2 sprigs fresh rosemary

Directions

Add finely chopped onion and garlic to 10" Le Creuset. Brown with vegetable oil. Mix flour, salt, pepper. coat lamb in flour mix.
Then add to pan with onions and garlic. add remaining flour to pan and stir into lamb. add wine and water slowly and stir.
Add carrots, celery, potatoes, bay leaves, rosemary, bouquet garni and stir. Bring to a boil, take off heat put the lid on.
Place in preheated oven at 325f for 4 hours.
30 minutes before done, add mushrooms and return to oven.
