Ingredients

    1 cup egg-whites
    2 large eggs
    6 Tbsp Vi protein powder or other protein powder (vanilla)
    1/2 tsp baking powder
    1 - 8oz bag of 2% cheddar cheese
    1/4 c. Hormel bacon bits (packaged)
    1 1/2 c. fresh spinach, chopped
    2 Tbsp Olive oil (optional)

Tips

Can omit olive oil to save some fat. Can also substitute sausage or ham for bacon bits, and green chile or ?? for spinach.
Great to make ahead & store in fridge or freezer.


Directions

Whisk first 4 ingredients together; mix in remaining ingredients. Spoon into 12 greased or sprayed muffin tins; bake at 400 degrees 15 - 20 minutes.
