Ingredients

1/4 C. EVOO (I used meyers lemon infused)
1 large shallot
2 -3 large cloves of garlic
1 1/2 C. fat free yogurt
6 spears lightly steam asparagus
1 1/2 C. sliced golden cherry tomatoes
1/3 C. white wine
3 T. (heaping) capers (drained)
1 pound smoked salmon, cut into small pieces
1 pound thin spaghetti, cooked al dente and drained
1/3 C parmesan cheese finely grated
Tips
I cook my spaghetti in a tablespoon of EVOO, reserve a little cooking water to add to sauce if you need to stretch it. Pasta should not swim in sauce.
Directions
In large skillet, heat EVOO over medium heat. Add shallot and minced garlic and saute until translucent (not browned). In a small bowl mix yogurt and wine until thin and totally mixed. Stir into the skillet and blend together over low heat. Add thinly sliced asparagus, halved cherry tomatoes and capers. Continue cooking for 10 minutes (covered) stirring often. After the pasta is done and drained into return to pot over low heat. Toss in smoked salmon and veggie sauce, tossing lightly to blend through. Move into a warm serving plate and cover with parmesan.
