Ingredients

    1 head red cabbage, shredded
    3 large beets, peeled and shredded (raw)
    3 large carrots, shredded
    1 red onion, shredded
    3 Tbsp Tahini (sesame butter)
    2 Tbsp soy sauce
    salt/pepper to taste

Tips

The natural sweetness of the beets and carrots will make substituting flavors for the tahini/soy a breeze. Try olive oil and a fruited vinegar, spicing it up with some curry powder and a few raisins, or using cashew butter and apples!


Directions

Shred vegetables (a food processor can help make this quicker!). Toss the shredded vegetables with the Tahini and soy sauce. Add salt/pepper to taste.
