Ingredients

    1 stick butter
    1 1/4 tbs dry cocoa
    3 c flour
    1 c white wine (or cold water)
    Oil for frying

Directions

Cream butter and cocoa together, mix well. Add flour and mix together as for pie crust. Add wine or water, mix into a thick dough. Knead on floured board into a smooth ball. Pinch off walnut sized pieces and roll into ovals about 1/8" thick. Wrap around cannoli forms. Moisten flaps to seal. Fry 3 at a time in hot oil (350 to 370 degrees) until very crisp (3 to 4 minutes). Remove from hot oil, hold form with pliers and slip cannoli off form. Drain on paper towels until completely cool. Repeat until dough has been used up. Insert filling with pastry tube. Makes approx 2 doz shells. (See Cannoli Filling)
