Ingredients

    1/2 cup long grain rice
    3 potatoes, sliced
    2 carrots, peeled, halved and cut into 1/2" pieces
    1 onion, chopped
    1.5 cup peas, frozen
    12 sausages, browned and cut up
    1 can tomato soup
    1 soup can of water
    1 can crushed tomatoes
    2 cloves garlic, minced
    italian seasoning
    salt & pepper

Tips

can use a wide variety of vegetables and seasonings, feel free to play with it. I spice it up when my husband is not home. May need more than 60 minutes, check its moisture for the rice


Directions

Preheat oven to 350 degrees.
Lightly grease a casserole dish or a 9x13" pan. Layer ingredients starting with rice, potatoes, carrots, onions, peas and sausages.
Mix tomato soup, with water, minced garlic and seasonings together in a medium sized bowl; pour over top of casserole. Cover casserole dish and place in center of over for 60 - 75 minutes.

Serving Size: Makes 10 - 12 cups and servings of 1.5 cups
