Ingredients

    2 cups black eyed peas (can or prepare from dry)
    1/2 cup chopped tomatoes
    2 tbsp chopped fresh parsley
    1/4 cup onion fine dice
    1/2 cup green pepper diced
    2 cups arugula roughly chopped
    salt and pepper to taste

    2 tbsp white wine vinegar
    2 tbsp EVOO





Directions

Combine all the vegetables i a large bowl. Whisk the oil and vinegar together or shake in a small container before pouring over - stir to combine.

Serving Size: Makes 4 x 1.5 cup servings
