Introduction

Ham & Bellavitano cheese add contrasting tastes to the mushrooms and spinach of the basic egg custard dish. Homemade wheat crust adds body to the meal. Ingredients

    Preheat oven to 375 degrees.
    Use 1/4 cup egg whites or breakfree to brush the pastry shell.
    Cook 2 slices of uncured bacon in a heavy skillet. Cut these up into 1/2 inch pieces first. Drain when brown and crisp.
    Dice 4 oz peppered ham into small bits and place evenly on bottom of pie shell. Cut 3 oz of cheese into bits and do the same.

    Put 3 oz baby spinach into the pastry she'll put 1 cup of mushrooms oner the spinach. Push this down with your fingers.

    Mix well 3 large eggs and 1/3 cup dry milk with 1/2 cup water. Pour this mix evenly over the spinach & mushrooms. Sprinkle the bacon bits over the whole.

    Cook for 35 minutes. Check on progress. Turn pan 180 degrees if one side seems to be done, but the other isn't. Your oven or the weather may make this dish take up to an hour to set properly.

Tips

Quiche is done when egg mixture is completely set & toothpick inserted into mixture comes out clean. It may take longer than 35 to 45 minutes.
