Ingredients

    3 cups all bran
    1 cup raisins
    .5 cup ground flaxseed
    .5 cup omega 3 oïl
    1 cup boiling water
    2 cup skim milk
    1 fresh squeezed lemon ( mix into milk )
    2 eggs
    .25 cup molasses
    2.25 cup spelt flour
    1 tblsp sugar
    2.5 tsp baking soda

I substituted the called for buttermilk with skim milk and lemon juice and the whole wheat flour with splet flour


Directions

combine all bran, raisins, flaxseed, omega 3 oïl
add boiling water and mix
add skim milk mixed with lemon, eggs, molasses
comine sifted spelt flour, sugar, baking soda and stir into bran mixture. do not overmix
let sit at least 60 min on the counter ( not in fridge ). this step is very important - you'll be happy you waited.

spoon into lined muffin tins - all the way to the top
bake in 400°F/ 180°C oven for about 30 min
