Introduction

I throw this together when I need a low fat but high carb and good protein side dish for my lunch or dinner. I throw this together when I need a low fat but high carb and good protein side dish for my lunch or dinner.

Ingredients

    1/4 cup black beans
    1/4 cup chickpeas, garbanzo beans
    1/4 cup kidney beans
    1/2 small bell pepper (any color), chopped up or sliced
    fresh squeezed juice from half a lemon
    1/2 tbsp olive oil (flavored, optional)
    Dash of kosher salt
    Dash of fresh cracked black pepper

Tips

Adding different herbs makes this even better. Adding a flavored vinegar in lieu of/or in addition the lemon juice gives it a nice kick.


Directions

Toss all ingredients together in a bowl. Enjoy!
