    6 - 8 cups baby arugula or fresh chopped arugula
    1 avocado, peeled and diced
    1 orange, peeled and diced
    1/2 lemon, juice only
    1 Tbsp. coconut oil, melted to liquid, but not hot


Combine the arugula with the avocado and the orange. (Peel and dice the orange with a paring knife over a plate and add any remaining orange juice to the salad.) Toss the salad with the lemon juice and oil.

(if coconut oil is solid, melt until liquid, but not actually hot)
