Ingredients

1 box - Kashi Go Lean Crisp-Toasted Berry Crumble
2 cups - Oatmeal
2 cups - EAS Soy Protein, Vanilla
1 cup - Walnuts (coursely chopped)
1 bag - Dried Mixed Berries
3 tblsp - Cocoa powder, unsweetened
6 tsp - Cinnamon
1 can - 100% Pumpkin
1 jar - Smuckers Natural Peanut Butter, chunky
3 - Motts No Sugar Added Applesauce - Berry Delight (single serving containers)
2 cups - Almond Breeze Almond Milk, Original (can use vanilla if you want)
6 tsp - vanilla (no need for this if you use the vanilla milk)
Tips
I don't use the same cereal or nuts all the time. This basic recipe can be modified easily. You can use a plain ceral and add other dried fruit for example.
I tend to cut mine small and use as a healthy take along snack. Great for when a sweet tooth hits!
Directions
Combine all dry ingredients (cereal, oatmeal, protein powder, walnuts, berries and cinnamon) and mix together in large bowl.
Add pumpkin, apple sauce and vanilla and mix together with dry ingredients.
Empty peanut butter in bowl and mix together until smooth (you can pop this into a microwave for about 30 seconds and it will mix together nicely). Add peanut butter to mixture.
Add Almond milk 1/2 cup at a time until all ingredients are mixed thoroughly. Mixture will be sticky, but you don't want it too runny.
Prepare cookie sheet with liner (parchment or foil) and spread mixture on cookie sheet. Cover and CHILL OVER NIGHT.
Cut into bars and store.
