Ingredients

    Zucchini
    Silver beet( Swiss chard)
    Potatoes
    Celery
    Onion
    Garlic
    Extra virgin olive oil
    vegetable broth

Tips

Don't need to add boiled potatoes. I had them on me so I added them.
Serve with little yogurt. Increases the flavor.


Directions

In a large, thick-bottomed pot over medium-high heat, add the olive oil. When the oil is hot (but not smoking) add the garlic and onions and saute for a few minutes. Add chopped celery and cook for few mins. Add boiled potatoes and stir till it becomes soft. Add in boiled potatoes and stir till they get little color. Now add chopped zucchini and cook for few mins. Stir in the chopped silver beet( both stalk and leaves), and wait for it to wilt. Add the stock. Bring to a simmer and cook for 10-15 minutes. Puree with a hand blender until smooth.

Serving Size: Serves 6-8.
