Ingredients

    1 Pillsbury Refrigerated Rolled Pie Crust
    5 large eggs
    1 c. fat free half and half
    3/4 c. diced ham (I use Morrell)
    1 1/2 c. shredded swiss cheese
    2 c. chopped fresh spinach
    1 c. sliced fresh mushrooms
    1/2 tsp. cayenne pepper

Tips

This is a very versatile recipe, you can use any combination of vegetables, meats (or no meat), and cheese that you like.


Directions

Preheat oven to 325 degrees. Roll out pie crust and place in bottom of 10" glass pie pan. Sprinkle ham, onion, spinach, mushrooms, and cheese evenly over bottom of crust. In med. bowl, beat eggs and milk, combine well; then mix in cayenne pepper. Slowly pour egg mixture in pie pan, distributing evenly. Bake in preheated 325 degree oven for 50 minutes or until egg is set in (center doesn't jiggle when shook).
