Introduction

Ingredients

2 Cups whole grain flour
1/2 Cup Splenda
2 tsp baking soda
1/2 tsp Nutmeg (fresh ground )
1 1/2 tsp Cinnamon
1 Cup Applesauce (unsweetened)
1/2 tsp salt (seasalt)
3 Lg eggs
3 Cups Carrots (Chopped)
Directions
Combine all dry ingrenients: Flour, Splenda, Cinnamon, Nutmeg and salt.
Than combine Applesauce and Eggs. Mix with dry mixture stirring until well blended. Now add the Carrots and stir until well blended.
Pour into a pan sprayed with a non stick spray. Bake @ 350 for about 1 hour. If using 2 round cake pans cut cooking time by aprox 10 minutes or until a toothpick comes out clean. Set aside to cool. Now decorate and enjoy.
To make a rabbit, use 2 round cake pans. when the cake is done. loosen cake from pan and place on racks to cool. Place one cake towards bottom of back side of cookie sheet. With the other round cake cut out 2 ears and that will leave you with the Bowtie. Decorate and enjoy.
