Ingredients

    2lb raw shrimp (size 26-30), peeled & deveined
    3 bunches fresh broccoli, cut into small florets
    Juice of 2 whole lemons (zest of one)
    1 tsp garlic
    1 tbsp extra virgin olive oil
    3 tbsp unsalted butter
    13.5oz box whole grain linguini
    crushed red pepper

Directions

Cook linguini per package instructions. In a large skillet over medium-high heat, heat 1 tbsp extra virgin olive oil. Add garlic & broccoli; saute 3-5 minutes. Add shrimp & crushed red pepper, lemon juice, lemon zest, & butter. Toss & continue cooking for 2-3 more minutes or until shrimp is cooked just cooked through. Serve over linguini & sprinkle with parmesan cheese.

Serving Size: makes 4 equal servings
