This recipe has NO added sugar or sugar substitute. Each Not Cupcake has about 150 calories so you can eat one with a piece of fruit for a quick breakfast on the go. Ingredients

    Mix the following dry ingredients thoroughly:
    5 cups old fashioned oats
    2 cups steel cut oats
    I c. ground flax seed
    Chop all of the fruit
    1 c. dried dates
    1 c. dried prunes
    1 c. raisins
    1 c. craisins
    1 c. dried apricots
    1 c. nuts chopped
    1 t. salt


    Mix the following wet ingredients in a separate bowl:
    6 small over ripe bananas, mashed
    2 2/3 cups of warm water
    1 c almond milk (or more water if you choose)
    1/4 c + 1 T coconut oil (or oil of your choice)
    2 1/2 t vanilla
    Add sweetner to taste. I don't add any. The fruit makes it sweet enough

    Pour liquid ingredients into dry ingredients and mix well. Spoon into cupcake lines and bake 21 minutes at 380 degrees. These will not rise at all. If you choose you may broil on low for 1 minute after they bake. These freeze well and can be eaten hot or cold.

Directions

Mix all dry ingredients and all wet ingredients in separate bowls. Mix wet into dry. Pour into cupcake lines and bake for 21 minutes at 380 degrees. You may broil them lightly for 1-2 minutes if you like. These are best when cold.
