Ingredients

1 pkg. McCormicks Fiesta Chicken Seasoning Mix
2 lbs. boneless skinless chicken breasts
2 cans. (14.5 oz each) diced tomatoes undrained
1 cup frozen whole kernel corn
1 cup black beans
2 cups finely shredded sharp cheddar cheese (optional)
2 cups cooked white rice
Tips
For best results do not remove cover while cooking.
Directions
1. Place chicken in slow cooker.
2. Mix Seasoning, tomatoes, corn, and beans until blended. Pour over chicken. Cover.
3. Cook 8 hours on low or 4 hours on high. Remove from slow cooker.
4. Shred chicken using two forks. Return chicken to slow cooker; Mix well. Serve over cooker rice with assorted toppings if desired.
