Ingredients

    Whole Wheat Flour, 1 cup
    Quick cooking oats (not instant) 1 cup
    Brown Sugar, packed, 3/4 cup
    Baking Powder, 2 1/2 tsp
    Baking Soda, 1/4 tsp
    Salt, 1/4 tsp
    Nutmeg ground, 1/4 tsp
    Cinnamon ground, 1/4 tsp

    1% Buttermilk, 1 cup
    Large egg, beaten with fork, 1
    Canola Oil, 2 tbsp

    Medium Apple, peeled, diced 1

Directions

Combine first 8 ingredients in large bowl. Make a well in center.
Combine next 3 ingredients in small bowl. Pour into well. Add apple. Stir just until moistened.
Spray muffin cups with no-stick cooking spray. Measure about 1/4 cup (60 ml) into each cup.
Bake in 375'F (190'C) oven for 15-18 minutes until wooden pick inserted in center of muffin comes out clean.
Cool in Pan for 5 minutes before turning out.

Serving Size: makes 12 muffins (1/4 cup in each muffin tin)
