Ingredients

    12 oz. can Tastie Farms Corned Beef
    2 small potatoes, diced very small
    1 medium Onion, diced small
    1 Tbsp Oilve oil
    5 large eggs
    salt and pepper to taste

Directions

Heat 1 Tb. oil in large fry pan over medium heat.\

Add finely diced potato in pan, season with salt and pepper if desired. Cook potato stirring frequently until slightly browned. Add Onion and continue cooking until onion is transparent, Add mashed or chopped corned beef and stirr thoroughly. Continue cooking until nicely browned.

jPut eggs in a medium bowl and stir until scrambled. Season to taste. Add eggs to the corned beef mixture and stir until eggs are done.

Makes 4 servings.
