Ingredients

    Trader Joe's Beef-less Ground Beef, 2 cup (one pkg)
    Quinoa cooked, 1 cup (cooked per package)
    Yellow, red, or orange bell peppers, three (3) sliced in half and seeds removed
    Onions, raw, .5 large, chopped
    Tomato Basil Marinara or tomato sauce, 1 cup
    Celery, raw, 3 stalk, large (11"-12" long)
    Cheese, Dairy-Free, Daiya, Mozzerella or cheddar Style, 3 serving
    Garlic (several cloves)

Directions

Saute onions, celery until soft. Add garlic.

Mix marinara, beef-less ground beef, quinoa, and veggies.

Stuff peppers with mixture.

Bake at 400 for 30 minutes. Add Daiya imitation cheese and bake until melted (use broiler to speed things up).
