Ingredients

    2 tsps olive oil
    1 15 oz can black beans drained and rinsed
    1 15 oz can corn drained
    1/2 cup diced red bell pepper
    1/2 cup diced onion
    1/4 cup cilantro
    1/2 to 1 tsp granulated garlic
    1/4 to 1/4 tsp cumin powder
    salt and pepper to taste

Tips

The measurements for the seasonings are approximate because I don't measure them, just sprinkle.


Directions

Heat oil in a non-stick skillet. Add bell pepper and onions and sauté until slightly softened. Add corn, black beans and seasonings. Saute for about 5 minutes more then add cilantro.
