Number of Servings: 18

Ingredients

    *Flour, white, 1 cup
    Oat Bran, .5 cup
    Oats 1 cup
    *Splenda, 1 cup
    Baking Powder, 2 TBSP
    Better option: 2 tsp baking powder + 2 eggs
    Cinnamon, ground, 2 tsp
    Salt, .5 tsp
    Nutmeg, ground, .25 tsp
    Powdered Milk, 1 cup

    Ground flax, 1/2 cup
    Raisins, .33 cup (not packed) OR Shredded coconut
    Nuts, .75 cup chopped

    Banana, 1 cup mashed from frozen
    Coconut Oil, 2 tbsp
    Vanilla Extract, 2 tsp
    Water, 1/4 to 1/2 cup
    Apples, 2 cups shredded
    Carrots, 1 cup shredded


Tips

Use eggs and reduce baking powder for better leavening, increased protein, and decreased sodium.


Directions

Mix dry ingredients in large bowl. Add nuts, flax, raisins or shredded coconut.

Mix wet ingredients in medium bowl. Add shredded apples and carrots.

Mix wet ingredients into dry ingredients, mixing just enough to combine.

Scoop into muffin tins (filling flat for 18, or very tall for ~12), and bake at 350F for 20 minutes
