Introduction

Ingredients

1 cup cottage cheese - Low Fat
1 Tbsp vinegar, distilled, white
1 can (15.5 oz) black beans (drained & rinsed)
1 can (14.5 oz) diced tomatoes - Low Sodium
1 can (16 oz) refried Beans - Fat Free
1 tsp crushed red pepper flakes
1 tsp white or black pepper
1/2 tsp Louisiana Hot Sauce (*optional)
1/4 cup cheese, shredded & Low Fat
Tips
I substituted in cottage cheese & vinegar in place of sour cream.
Directions
1) In food processor, puree cottage cheese with vinegar., scrape down until smooth, then place into small crockpot.
2) Drain & rinse black beans, place into processor & puree until somewhat finely chopped, then place into crockpot.
3) Add in diced tomatoes, refried beans, crushed red pepper, white/black pepper, hot sauce & only HALF of the cheese; Stir mixture until well mixed then cover.
4) Cook in crockpot for at least 1-2 hrs on high or 2-3 on low before serving, can be longer on low.
5) 10 minutes before serving, top with remaining cheese & recover to melt cheese before serving.
REMEMBER to change corckpot setting to warm while serving.
