Ingredients

Wet Ingredients:
Carrots, raw, 3 medium, grated
Kellogg's Raisin Bran Cereal, 1 cup
Kellogg's All-Bran Cereal, 0.5 cup
Milk, 1%, 1 cup
Raisins,0.5 cup (not packed)
1 large raw egg
Dry Ingredients:
Baking Powder, 2 tsp
Baking Soda, 1 tsp
8 Splenda Packets
Flour, white, 0.75 cup
Pumpkin Pie spice, 2 tsp, or to taste
Tips
You can add pineapple and coconut if desired.
Directions
Mix the cereals, carrots and milk together in a bowl, allowing the cereal to absorb the milk, for about 5 minutes. Stir in the raisins and egg, combining well.
While the cereal is soaking, mix the dry ingredients together in a bowl. When the wet ingredients are ready, mix the two until all the dry ingredients are incorporated into the batter.
Either spray a cake pan with non stick spray or prepare a muffin tin with liner. Bake at 350 for about 30 minutes or until done through.
