Ingredients

    lean ground beef - 1/2 lb
    1 small onion chopped - 1/2 C
    cooked black beans - 1C
    Taco Seasoning - 1 pkt (1 oz)

    chopped fresh tomato- 1C
    Kraft mexican shredded cheese blend- 1/2 C
    fresh baby spinich- 1C


    4 Whole Wheat Tortillas - medium

Tips

Replace the ground beef with chicken, pork, or fish (really! fish is great!) or with beans for a change of pace. If you'd like, add a tablespoon of greek yogurt.


Directions

Lightly spray a skillet with olive oil. Add chopped onion and cook on low heat until transparent. Add ground beef and cook until well browned. Add Beans, 1/2 of the salsa and the taco seasoning and cook over low heat for an additional 5 minutes.

On each tortilla place 1/4 each of the beef/bean mixture, cheese, spinich, tomato, and remaining salsa.

Serving Size: Makes four Tacos
