2 Medium tomatoes
1/4 Raw Red Onion
1 can yellow corn (Look for organic)
1/2-1 can black beans
4 Tablespoons Apple Cider Vinegar
Juice and Zest of 1 Lime
1/2 Tablespoon Dried Parsley (If fresh use more to taste)
Tips
Great in tortillas or on top of chicken breast.
Directions
Dice tomatoes and onion and place in medium size bowl.
Wash and rinse corn and black beans and add to bowl
Add parsley, apple cider vinegar and lime.
Mix together well.
Refrigerate for one hour before serving.
