I love this stuff. It's like tapioca but with less sugar, fat, etc. I love this stuff. It's like tapioca but with less sugar, fat, etc.

Ingredients

    Approx. 1/2 C chia seeds
    1 cup unsweetened almond milk
    4 g. (1 packet) coconut sugar
    1 tsp. vanilla extract

Tips

If you like a thicker consistency just add more chia seeds.


Directions

Combine ingredients in a container that you can seal (like a tupperware) and mix thoroughly. Let it sit in the fridge for about an hour to give the seeds time to plump up and set the "pudding". Enjoy!
