Introduction

Number of Servings: 24

Ingredients

    1 cup sugar
    2/3 cup canola oil
    1 14 oz can light coconut milk
    1/4 cup rice milk (or soy or almond milk)
    1/4 cup lemon juice
    3 T finely grated lemon zest
    2 t vanilla extract
    3 cups flour (organic whole wheat pastry flour)
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt


    1/2 cup green frosting
    Green sprinkles

Directions

Preheat the oven to 350* . Lightly grease an 8 or 10 inch bundt pan. In a large mixing bowl, combine the granulated sugar, oil, coconut milk, rice, soy or almond milk, lemon juice and zest and vanilla. Stir to combine. Sift the flour, baking powder, baking soda, and salt into the wet ingredients in batches, mixing well after each addition. Pour the batter into the Bundt pan. Bake for 1 hour, or until a knife inserted through the cake comes out clean. Remove from the oven and let cool for about 10 minutes, then place a cutting board over the cake pan, gently flip over, and release the cake from the pan. Let cool completely.
Drizzle with frosting and sprinkles
Slice and serve.

    I HAVEN'T TRIED THIS RECIPE AND I TRY TO STAY AWAY FROM SWEETS BUT WHERE IS EVERYONE COMING UP WITH 552 CALORIES PER SLICE. IT SAYS 188.2 CALORIES ON THE RECIPE. I HAVEN'T SEEN 552 CALORIES EXCEPT IN THE REVIEWS. PHYL32 - 3/8/15

    Seriously? Why in the world would you feature a cake that is 552 calories per slice on a diet conscious website? Ridiculous! This should recipe should not be on Sparkpeople. - 3/8/14

    The recipe that I am looking at has 188.2 calories per serving. Is that wrong? Where is everyone getting over 500 calories per serving? I even looked at the nutritional breakdown.....still not 500 plus calories per serving. Now I am afraid to make this for I don't know correct caloric value. - 3/8/15

    Yikes! I could have 6 mugs of green beer for this many calories (and only about 1/3 of the carbs). Although, if I did drink that much beer I wouldn't care about calories. Guess if I want something green for dessert I'll stick with low fat pistachio pudding. - 3/8/14

    I got a chuckle out of this recipe with all the healthy ingredients. Then, green frosting (sugar, saturated fats, food dye) & green sprinkles (more more sugar & food dye) which may or may be vegan.
    By the way, who has EVER been able to get 24 slices out of a bundt cake? 16 maybe, but not 24.

    Of course an abundance of lime zest is what I prefer for the top! :-) I would choose another dessert for myself, 24 servings would make a piece far too small to be satisfying! - 3/8/15

    I calculated it at 190 cals per serving for 24 servings. So if you want a tiny sliver of cake (without frosting) for almost 200 calories, go for it! I'll pass. - 3/8/15

    As with any recipe if you eat 3 times the serving size you will get 3 times the calories. Recipe says 1/24th of cake has 188 cal, 3 times or 1/8th of cake would equal approx. 564 cal. If you want a taste of a delicious cake try this. If you are unable to stop at one piece better not make it. - 3/8/19

    AND~~in my email it says recipe serves TWELVE (12 ) BUT when I go check the recipe it says serves TWENTY FOUR (24 ) !!!!!!

    I've been doing this long enough I have some better health suggestions:
    1) a pretty green doily under your health food
    2) green food colored angel food cake (higher protein due to those egg whites)
    3) ricotta cheese, splenda and kiwi parfait

    Altho I have never tried this recipe, I think the key issue is moderation. Every now and then a high cal, etc snack can help us in our journey. I see healthy ingredients.     I am afraid that the only way I could possibly make this recipe is to use a sugar substitute and applesauce for the oil. I would also eliminate the frosting and just dust it with powdered sugar or serve it with Light Cool Whip. - 3/8/14

    Perhaps applesauce will cut the fat, but what to do about almost 2 cups of sugar? Report after report tells us we are eating too much sugar and yet, here is this recipe. Just reading it and looking at the picture can start up cravings. Bad move SP! - 3/8/14

    If you omitted the frosting (which is 155 calories per serving) and dusted it with powdered sugar, and substituted apple sauce for the oil, it may be SOMEWHAT healthy and light. Not the way its's written. - 3/8/14

    I guess it is the "luck of the Irish" cake since the saying refers to all their bad luck with the famine etc. I think I would have as much bad luck if I thought I could eat this cake since I am trying to only eat 1800 cals and 135 carbs a day one slice is half my carbs and about 1/4 my calories. - 3/8/14

    It MAY BE "FESTIVE"; but it is hardly "LIGHT", at 552.4 CAL & 77 gr. CARBS per SERVING! I think I gained 10 lbs. just "READING" the ingredients! "EL PASSO" for me! LOL
