Ingredients

    5 C Black beans, dry
    2 C chopped onion
    1 T minced garlic
    1.5 C Green bell peppers, chopped
    2 T Lemon juice
    2 tsp salt
    1.25 C cooked short grain brown rice

    Toppings:
    Mild salsa
    Shredded cheddar
    Sour cream

Directions

Soak beans overnight. Cook until tender. When beans are almost done, add the vegetables. 5 minutes before serving, add salt and lemon juice. Serve over hot brown rice and finish with your choice of toppings.
