Ingredients

    Baby Spinach: 6 oz.
    Shredded Mozzarella: 1.5 c.
    Large Grade A Eggs: 10 eggs
    Vegetable Oil: 1 tbsp.
    Salt and pepper to taste

Directions

Preheat oven to 375. Heat vegetable oil in a skillet over medium heat. Add spinach and toss, allowing to just barely wilt. Spread barely wilted spinach evenly in bottom of a lightly greased 9x13" casserole dish. Sprinkle mozzarella evenly over spinach. In a separate bowl, beat 10 eggs and add seasoning if desired. Pour beaten egg mixture over cheese and spinach. Stir ingredients in casserole dish to mix. Bake at 375 for 35 minutes or until middle is set and top is browned.
