Ingredients
-
DRY TEAM
4 cups old fashioned oatmeal
1 cup white sugar
2 TBS molasses
1/4 tsp. PURE stevia (I use NuNaturals NuStevia)
1 tsp salt
4 tsp. baking powder
1 tsp ground cinnamon
6 TBS ground flax
WET TEAM
4 eggs, lightly beaten
1 cup whole milk
1 stick butter, melted
FRUIT TEAM
2 cups chopped & peeled apple
2 cups chopped & peeled peaches
2 cups frozen unsweetened blueberries
Tips
I use a 29 oz. can of peaches, well rinsed and drained, and then chop them.
We actually like this better cold the next day. The fruit makes it syrupy. It cuts into squares better after it cools and can be frozen perfectly.
Directions
1) Combine DRY TEAM ingredients in a large bowl.
2) Combine WET TEAM ingredients in a quart liquid measuring cup or small bowl until well incorporated. Mix WET TEAM into DRY TEAM.
3) Stir in FRUIT TEAM.
4) Bake uncovered at 350 degrees F for 35-40 in a greased 9X13 pan.
Serving Size: makes a 9X13 casserole, 12 servings
