Introduction

Ingredients

    4 C snap peas - or other veggies
    3 cloves garlic, minced
    1 large onion, chopped
    1TBS olive oil
    1 Cup reduced-fat low sodium chicken broth
    1 can (15 oz) Cannelline (great northern) beans
    1 box (13.25 oz) whole wheat pasta
    4 ox. fate free feta cheese crumbled
    mint, salt pepper to taste

Directions

Boil pasta. while pasta is boiling, Over medium high heat saute peas, garlic and onion in hot oil for 10 minutes or until crisp tender. Stir in broth and cannellini beans, bring to oil, reduce heat tomedium low and cook for 3 minutes. Turn off heat.

Season with salt and pepper. Toss with pasta until well coated. Sprinkle with feta, and mint if desired, just before serving.
