Ingredients

    1/4 cauliflower
    2 carrots
    1 red pepper
    1/2 red onion
    3 cloves garlic
    2 TB balsamic vinegar
    2 TB olive oil
    2 chicken breasts
    1.5 tsp rosemary
    3 cups frozen broccoli

Directions

preheat oven to 475
Toss vegetables, garlic, vinegar, and 1 TB olive oil in a microwavable bowl, cover with plastic wrap cook on high for 2 -5 minutes, until vegetables are slightly softened
dry chicken, season, sprinkle with rosemary. Heat 1 TB olive oil in pan, heat over med-high, cook until browned, about 5 minutes per side.
remove chicken, add vegetables and chicken to oven safe dish, bake for 15 minutes. serves 4
