Introduction

These cookies have half the amount of butter of normal chocolate chip cookies and no eggs. This recipe was created partially by accident when I was experimenting using applesauce as a substitute for butter. I was halfway through the recipe when I found I had no eggs. Instead of getting some I used applesauce instead of the egg as well.

They almost have the consistency of oatmeal cookies. The mini chocolate chips ensure there is a great chocolatey taste with less of the guilt. Enjoy!

Ingredients

    Butter, unsalted, 1/4 cup
    Applesauce, unsweetened, 1/2 cup (divided)
    Brown Sugar, 1/2 cup, packed
    Vanilla Extract, 1 tsp
    Baking Soda, 1/2 tsp
    Salt, 1/4 tsp
    Nestle Mini Chocolate Chips, 1 cup
    Granulated Sugar, 1/2 cup

Tips

Baking times may vary
I used a full cup of chips but it could easily be done with 3/4 or even 1/2 cup.
It's a very versatile base. You could add nuts or anything else to add variety.


Directions

-Preheat oven to 350 degrees F
-Cream together the butter, 1/4 cup of applesauce, white sugar, and brown sugar until smooth.
-Stir in the rest of the applesauce, then stir in the vanilla.
-Add the baking soda and salt.
-Stir in flour and chocolate chips.
-Drop by large spoonfuls onto ungreased pans.
-Bake for about 15 minutes in the preheated oven, or until edges are nicely browned.
