Ingredients

1lb. ground turkey, white meat
3/4 c. cooked quinoa
1/2 c. rolled oats
1 carrot, diced small
1 green onion, chopped
1 egg
2 egg whites
1 tsp. cumin
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground mustard
1/4 tsp. chili powder
1/4 tsp. garlic powder
2 Tbsp. fresh parsley, chopped
Tips
I used the muffin liners and it worked like magic. No reason to put yourself through soaking and scraping the muffin pan repeatedly. Ain't nobody got time for that!
Directions
1. Preheat oven to 375 degrees and grease a muffin pan or line with muffin cups.
2. Mix all ingredients in a large bowl together.
3. Divide evenly among muffin cups
4. Bake for 35-40 minutes until fully cooked.
5. Let cool for 5 minutes, then use a knife to loosen the edges and cool on a rack.
Serving Size: Makes 12 Muffins
