Ingredients

4 tbs Peanut butter (creamy)
1 cup carrots sliced
1 sweet pepper
1/2 onion
3 cups of rice noodles (thick)
2 chicken thighs
3 green tail onions
1/4 cup peanuts crushed or chopped
2 tbs sesame oil
1 tbs cider vinegar
1 tsp garlic
2 tbs ground ginger
juice from 1 lime
Directions
SAUCE:
Combine Peanut butter, sesame oil, cider vinegar, ginger, garlic and whisk till blended. if thick ass a little chicken stock.
Cook noodles according to directions and drain and set aside.
Slice chicken and heat oil up in wok. Add chicken and cook part way through adding vegetables and stir fry them until cooked through. Add sauce and noodles. Adding more broth if really thick.
Place in bowl and garnish with green tail onions and Crushed peanuts.
Serving Size: makes three 2 cup servings
