Introduction

Ingredients

    3 small very ripe bananas
    3/4 c. oat flour
    3/4 c. vanilla protein powder(use soy or rice if making vegan)
    1/4 c. unsweetened applesauce
    1 tsp baking soda
    6 oz. plain greek style almond or coconut yogurt
    2 tsp ground flax seed
    2 oz. unsweetened almond milk
    2 tsp vanill extract
    Stevia to taste (or other natural sweetener.

Directions

Preheat oven to 375 degrees.

Add all dry ingredients to a food processor, and process in short pulses to incorporate. Add banana, yogurt, vanilla extract, almond milk, and applesauce. Process until batter is smooth.

Evenly distribute into 12 paperlined muffin cups sprayed with nonstick spray. Bake for 16-18 minutes.
