Ingredients

    3 red beets, julienne
    1 fennel bulb, thinly sliced
    1/2 english cucumber, thinly sliced
    1.5 c. jicama, chopped
    1 c. red raddishes, thinly sliced
    4 c. kale

Tips

I highly recommend getting a mandoline to do the slicing and julienne-ing. Cuts prep time significantly!


Directions

Prep all of the ingredients and combine in a large bowl.
