A healthier version of your favorite brownies!!! A healthier version of your favorite brownies!!!Number of Servings: 1
Ingredients

1 c. whole wheat flour
1 c. raw sugar
1/2 c. unsweetened cocoa powder
1/2 tsp. baking powder
1/2 tsp. salt
1 small zucchini
1/2 c. extra virgin olive oil
1 tsp. vanilla
1/2 c. chocolate chips (we like Ghiradelli semi-sweet)

Tips
Allow to cool for 20 minutes before serving.
Directions
Preheat oven to 350. Combine flour, sugar, cocoa powder, baking powder and salt.
In a food processor, puree zucchini as much as possible. Add in oil and vanilla and puree until smooth.
Combine the liquid zucchini mixture with the dry ingredients. (*This will make a VERY thick batter) Once mixed, add chocolate chips.
Spray 9x13 pan with cooking spray. Transfer batter to pan. Bake for 15-20 minutes (depending on taste) until inserted toothpick comes out clean.
