Introduction

Didn't feel like making muffins, but wanted something to give my kids for breakfast, and I ended up enjoying it, too!

Ingredients

    4 cups oat flour
    1/4 cup a.p. flour (optional-I wasn't sure so I added it, but it probably could have done without)
    3/4 packed cup brown sugar
    1/4 cup real maple syrup, or 3 tbsp maple sugar.
    1 tbsp baking soda
    2 tsp-1 tbsp cinnamon
    2 tsp vanilla extract
    3 medium apples, diced small (core removed of course)
    2 eggs, (or one large overripe mashed banana if you're going for vegan)
    1/4 cup cooking oil of your choice
    1.25 cup unsweetened, unflavored coconut milk

Directions

Preheat oven to 350, with rack on top. Lightly grease or spray w/ non-stick cooking spray a 11"x9", 2" deep baking pan.
In a large bowl, combine dry ingredients before adding wet ingredients, then add wet ingredients and blend thoroughly. Place in pan and spread evenly. Batter will be heavy, but not to worry. It cooks up really soft and fluffy. Just sweet enough.

Serving Size: Makes 16 pieces if you cut it evenly.
