Ingredients

    2 lb boneless pork loin
    4 med. potatoes (peeled and chopped chunky)
    8 carrots (peeled & chopped chunky)
    2 tbsp extra virgin olive oil (canola or veg fine too)
    Seasoning to taste or just salt & pepper is fine too.

Tips

I like to put a dry rub on the meat (whatever spices you like) and sprinkle Mrs. Dash over the potatoes & carrots.


Directions

While oven is preheating to 400, peel & chop veggies. Put then in bottom of pan, drizzle with the oil & mix together until all coated. Then spread around the outer edge of pan and place pork loin in the middle. Cover and bake 30-45 mins until meat reaches 165 degrees. Dont' overcook.
